Courgette Stuffed With Couscous 
Version 2
Serves 4

2 Courgettes, cut lengthways with flesh scooped out.
Lemon Juice for drizzling.
4 Large Serving Spoonfuls of Couscous.
1 Large chopped Onion.
4 Large Serving Spoonfuls of cooked Sweet Corn.
1 Small tin of Tuna Chunks.

Preparation Method

  1. Lay the Courgette pieces in Microwaveable dish and blast for 3 minutes in Microwave until soft.

  2. Place the couscous into a bowl and pour over enough boiling water to cover the couscous - leave to stand for 4-5 minutes until water is soaked up. (Some Coucous needs Steaming for 30 Minutes instead - see packet) 

  3. Mix Tuna, Sweet Corn and Onion into Coucous. 

  4. Then fill Courgette pieces, drizzle with Lemon Juice and replace in Microwave for another 3 Minutes. 

  5. (At mixing stage you may want to add some herbs as the delicate flavours may be too bland for some people.
