Courgette Soup

Courgettes are very versatile and can be used in many ways. With a few other ingredients for added flavour they can be used to make a "Different," soup. So if you have a lot of surplus from your harvest, you can make a few tub-fulls and freeze them for Winter.

Ingredients
1 Large Courgette chopped
1 Whole Onion
1 Handful Ginger Mint leaves, or ordinary Mint
1 Pinch of Mixed Dried Herbs, or fresh leaves
A few Sunflower Seeds


Method

  1. Start by roughly chopping up the Onion and Courgette.

  2. Tip into Saucepan with other ingredients and a little water.

  3. Bring to boil and simmer for a few minutes until the Courgette is soft and cooked.

  4. Drain off a little of the water and "Blitz," the ingredients until smooth.

  5. Serve while hot or cool and freeze.
