Courgette Fritters
Serves 4-6

You probably all have your own favourite recipe, but this one is absolutely delicious and served with salad, mayonnaise & chilli jam makes a lovely light lunch.
Prep time 30 mins
Cook time 10-15mins

Ingredients
450g courgettes
4tbsp flour
1 tsp gnd cinnamon
- tsp cayenne pepper
1-2eggs, beaten
90g fine breadcrumbs
45g grated parmesan
black pepper
oil for frying


Method

  1. If the courgettes are large slice them into ovals, if small, quarter them lengthways

  2. Put into a colander, salt them & leave for approx hour then rinse & dry.

  3. Mix the flour, cinnamon, cayenne & black pepper on a plate.
    Set the bowl with beaten egg next to it, and in a third mix the breadcrumbs with parmesan.
    Take a few courgettes at a time, dip in the flour then egg & then breadcrumbs 

  4. Fry in batches for 4-6 minutes in hot oil in a shallow frying pan (1cm depth).

  5. Drain on kitchen paper & keep in hot oven until all are cooked.
